Brandy Snaps

Makes about 18

90g butter
1/3 cup brown sugar
1/4 cup golden syrup
112 cup plain flour
2 teaspoons ground ginger

1. Stir butter with sugar and syrup in a saucepan over low heat until butter melts. Remove from heat.
2. Beat in remaining ingredients. Spoon teaspoonfuls onto greased baking trays, allowing room for spreading (about 3 on each tray).
3. Bake in a moderate oven (180°C) for 5 minutes or until golden brown. Cool on trays for 1 minute. Keep flat, or roll around a greased wooden spoon handle until firm. Fill with whipped cream if desired. Store in airtight containers with a sheet of baking paper between layers.
