Blackberry and Barley Lemonade

Serves 8

250gm blackberries (see note)
550gm (2 1/2 cups) caster sugar
50gm (1/4 cup) pearl barley, rinsed under cold water
250ml (1 cup) lemon juice (about 6 lemons)
Lemon slices, to serve

Place blackberries in a large heatproof bowl and set aside. Combine sugar, pearl barley and 3 cups of water in a saucepan and bring to the boil, stirring occasionally to dissolve sugar. Reduce heat to low, simmer for 5 minutes to infuse, pour over blackberries and set aside to cool. Add lemon juice and 700ml water. Using a slotted spoon, remove blackberries and discard, pour lemonade into sterile bottles and refrigerate until required. Serve with plenty of ice and lemon slices. Makes about 2 litres.

Note:
If fresh blackberries are unavailable, substitute frozen blackberries.
