6 slices wholemeal bread
90g butter, melted
3 Tablespoons brown sugar
375g seasonal mixed berries
1/2 cup cream, whipped
fresh mint springs (optional)
1. Preheat oven to 200c.
2. Using a 10cm biscuit cutter, cut a bread circle from each slice of bread. Brush both sides with melted butter and press into a muffin tray. Sprinkle each breadcase with 1/2 tablespoon Brown Sugar.
3. Bake at 200oC for 10 mins or until crisp and golden. Remove breadcases from muffin tray and place on a wire rack.
4. Divide mixed berries between breadcases. Top with cream and garnish with mint. Serve immediately.
Note: If fresh berries are unavailable, substitute with canned berries.
