Baked Zucchini in Sour Cream

Baked Zucchini in Sour Cream

1/2 kg zucchini
90g cream cheese
2 tbsp onion, finely chopped
salt and freshly ground pepper
1/2 carton sour cream
paprika

Place zucchini in boiling water, reduce heat and simmer 5 mins. Drain, cut in half lengthwise, scoop seeds into a small bowl. Mix this with cream cheese, onion and seasonings. Fill zucchini and arrange in buttered dish. Spoon some sour cream over, dust with paprika and bake in a shallow baking dish uncovered for 8-10minutes.
