Bagels

Makes 12 Bagels

25g fresh yeast
500ml lukewarm water
1 tbsp salt
2 tbsp honey, clear
750g – 850g strong bread flour
egg white for brushing

1. Dissolve the yeast in the water and add honey and salt.
2. Add flour a little at a time and mix the dough in a mixer for about 5 minutes. The dough should be firm.
3. Let the dough rise in a mixing bowl under a cloth until it doubles in size, about 50 minutes.
4. Put the dough on a floured surface and knead it lightly. Divide it into 12 pieces.
5. Shape every piece into a round shape and press out a raterh large hole in the middle with your fingers. Spin the ring around your finger (like a hula hoop) to make it even.
6. Let the rings rise under a cloth on a tray lined with baking parchment for about 45 minutes.
7. Preheat the oven to 180C. In the meantime boil water in a large pan.
8. Boil a couple of rings at a time, 1-2 minutes on each side.
9. Dry the rings on kitchen towels and place them on a tray lined with baking parchment.
10. Brush with beaten egg white.
11. Bake in the middle of the oven for about 25 minutes.

Poppy Seed Bagels

1 portion dough for bagels (see basic recipe above)
egg white for brushing
125g poppy seeds

1. Make the dough according to the basic recipe.
2. Preheat the oven to 180C.
3. Let rise, shape and boil according to the basic recipe.
4. Brush the boiled bagels with beaten egg white and sprinkle with poppy seeds.
5. Bake in the middle of the oven for about 25 minutes or until cooked and golden.

Blueberry Bagels

1 portion dough for bagels (see basic recipe above)
100g (4oz) blueberries
egg white for brushing

1. Make the dough according to the basic recipe and carefully add the blueberries in by hand.
2. Preheat the oven to 180C.
3. Let rise, shape and boil according to the basic recipe.
4. Brush the boiled bagels with beaten egg white
5. Bake in the middle of the oven for about 25 minutes.

Cheese Bagels

1 portion dough for bagels (see basic recipe above)
250g (9oz) mature hard cheese (cheddar type) coarsely grated
egg white for brushing

1. Make the dough according to the basic recipe. Add two-thirds of the grated cheese to the dough and save the rest.
2. Preheat the oven to 180C.
3. Let rise, shape and boil according to the basic recipe.
4. Brush the boiled bagels with beaten egg white and the rest of the cheese.
5. Bake them until golden in the middle of the oven for about 25 minutes.
