Bacon, Cabbage and Cauliflower Soup

1 tablespoon butter
6 rashers of rindless bacon, chopped
2 leeks, sliced
2 cloves of garlic, crushed
1/2 medium cauliflower, cut into floretes
1/2 medium cabbage, shredded
5 cups chicken stock
salt and pepper
2 spring onions, chopped
dollop of sour cream
sweet paprika

Heat butter in a large saucepan, add bacon, leek and garlic, sauté 5 minutes. Add chicken stock, cabbage, cauliflower and seasoning, bring to the boil, simmer with lid off for 30 minutes. Serve with a dollop of sour cream, chopped spring onions, and a sprinkle of sweet paprika.
