Weetbix Slice

Weetbix Slice

60g dark chocolate
110g butter
1 Tbsp golden syrup
3 weetbix (48g)
100g desiccated coconut (1 cup + 2 Tbsp)
1/2 cup brown sugar, firmly packed
1/2 cup plain flour
1/2 cup self-raising flour

Icing:
1 cup icing sugar
1 tbs cocoa
1 tsp butter, softened
1 1/2 Tbsp milk
coconut to sprinkle on top

1. Preheat oven to 160C.
2. Prepare a 28 x 18cm tin.
3. Melt chocolate and butter over low heat. Remove from heat and stir in golden syrup.
4. Finely crush weetbix. Stir in coconut, brown sugar and flours.
5. Combine choc/butter mix with dry ingredients. Press into tin and bake for 15 minutes.
6. Mix all icing ingredients together while slice is baking. Icing will be thick but will melt as you put onto warm slice.
7. Sprinkle with coconut.
