Orange Melting Moments

Makes about 20.

175g butter, softened
100g (2/3 cup) icing sugar, sifted
1-2 teaspoons finely grated orange zest
1 teaspoon vanilla
2 tablespoons cornflour
325g (1 1/2 cups) flour, sifted

Filling:
75g butter, softened
150g (1 cup) icing sugar, sifted
1 tablespoon orange juice

1. Preheat the oven to 160°C (fan-forced). Line a baking tray with baking paper. Place the butter and icing sugar in a medium bowl and use electric beaters to beat until light and fluffy. Add the orange zest, vanilla and cornflour, beating to combine. With the electric beaters running continuously, add the flour, a tablespoonful at a time, until entirely incorporated into the mixture.
2. Roll dessertspoonfuls of the dough into balls. Place on the baking tray, about 6cm apart, and lightly flatten with the back of a fork. Bake for 12-15 minutes or until crisp and beginning to golden. Cool on wire racks.
3. To make the filling, wipe the mixing bowl and electric beaters clean with paper towel. Place the butter, icing sugar and orange juice in the bowl and beat until fluffy. Spread a little icing half the biscuits and top with the other halves.
