Ham and Olive Frittata (Age: 9 Months +)

Ham and Olive Frittata

1 tbsp olive oil
1/2 small onion, diced
5 eggs, whisked
120g button mushrooms, diced
120g medium zucchini, diced
1/2 red capsicum, deseeded and thinly sliced
100g shaved ham, finely sliced
1 tbsp chopped fresh parsley
2 tbsp chopped fresh basil
9 pitted black olives
Fresh basil leaves to garnish

1. Heat oil in a large non-stick frying pan over moderate heat. Cook onion for 3 minutes or until soft. Add zucchini, mushrooms and capsicum. Cover, reduce heat and cook for about 8 minutes.
2. Stir in ham, parsley and basil. Pour eggs over the ham mixture and then sprinkle the olives over it. Increase the heat to moderate again and cook for about 7 minutes, or until the bottom half is set.
3. While this is going on, preheat the grill to a moderate temperature. Cook the frittata under the pre-heated grill for 4 minutes or until just set and golden. Serve garnished with basil.

Note:
The ingredients in this recipe are not suitable for babies under nine months of age.
